Kong Poh Prawn & Hairy Gourd Soup

I cook these dishes last Wednesday for dinner. There are Hairy Gourd Soup and Kong Poh Prawn. My hubby like them :D. With just a single word or a satisfactory smile from your beloved ones, you will feel very happy and appreciated! no matter how much sweat you are drown with in the kitchen.....It's all worth it.... :D


Hairy Gourd Soup with Pork Rib and Dried Scallop

As the name of the soup says it, you will need one hairy gourd about 400g for 2 persons (peel and cut into pieces and remove the inner seeds), 300g of pork ribs (cut into pieces), 2 dried scallops, and 8 red dates. First, clean the pork ribs and blanch with hot water. Pour away the hot water and rinse the meat under running tap water twice. This will give you a clearer soup. Let it rest aside. Then boil about 2L of water with the dried scallops. Once boiling, put all the other ingredients into the water. Boil for 15 mins and put it to low fire for another 1.5hr - 2hrs. You can put some soya sauce to your liking before serve.

Kong Poh Prawn
Get about 10 fresh prawns from the market (include any other seafood that you like - squid, etc), a thumb size of ginger (sliced), minced garlic (3 cloves), 5 dried chillies (rinse and cut into pieces), spring onions (1 stalks - sectioned), 4 tbsp of rice wine, 2 tbsp vinegar, some water, soya sauce, sugar or plum sauce, some tapioca solution and a dash of black pepper. First, saute the ginger, garlic & dried chillies till fragrant. Add in rice wine, vinegar, water, soya sauce, sugar & black pepper. Stir fry a little to mix the gravy up. Put in the prawns. Stir-fry and let the gravy bubbled up a little. Then pour in the tapioca solution. The gravy should thicken up. Then it's ready!
